Burrata Cheese
Here we were in Torino, Italy and more than ready for a real Italian pizza. As the waiter approached the table, I could see the steam drifting upward from the juicy toppings clinging to the sizzling crust. When he placed it on the table, I couldn’t take my eyes off of the large white ball right in the center. The only words I could say was “Wow! That is sure a different pizza!”
Most of the pizzas we had weren’t cut into slices so we started to separate it into serving pieces. That’s when a creamy mixture seeped from the white ball inching over the pizza crust. After one taste, my response was the same. This is sure a different kind of pizza! It was so delicious that I just couldn’t wait until I could use this ingredient in my recipes.
Imagine a mozzarella ball with a solid outer shell while the inside contains both mozzarella and cream, a velvety soft mixture. It is usually served fresh or at room temperature. In fact, the word burrata means “buttered” in Italian. When you cut into Burrata cheese, a rich buttery cream flows out. This is Burrata cheese, the new top trendy cheese that is becoming everyone’s favorite. Serve it with crusty bread and a glass of wine. I also love it with salad, prosciutto crudo, fresh tomatoes and even pasta. It has a short shelf life and is best used within 24 hours.
