It seems that Meathead, dressed in scruffy jeans and shirt, fit the mode of a backyard griller but I soon found that he was much more. Goldwyn, taught at Cornell University’s School of Hotel Administration, was a journalist who has written for The Washington Post and Chicago Tribune, and created a website AmazingRibs.com in 2005. However, he doesn’t just post recipes there; he uses science and research, written in layman terms, to aid cooks of all levels and had just written a book, “Meathead – The Science of Great Barbecue and Grilling. Goldwyn” worked with Greg Blonder, a professor at Boston University, who has a physics degree from Massachusetts Institute of Technology and a doctorate in physics from Harvard University. Blonder collaborated on the new cookbook and is the resident science advisor on his website. He was definitely a treasure to find, a science-driven culinary writer. He uses science to shatter myths about barbecue lore. He attacks grilling like a scientist striving to understand what makes grilled dishes delicious.
