Tim Burton – Burton’s Maplewood Farm in Medora Indiana
When his syrup was submitted to the Indiana Artisan program. He was recognized for his high level of commitment and skill and named an Indiana Artisan. He was also instrumental in creating the first annual National Maple Syrup Festival, where people could enjoy entertainment, craft making and participate in making maple syrup.
Burton has gained prominence for his specialty, barrel-aged maple syrup, and ages his syrup in a variety of barrels such bourbon, blackberry whiskey, peach brandy, red wine and beer. Wood barrel aging imparts caramelized flavors of charred wood sugars and hints of other flavors in the container, such as beer or spirits and adds unique flavors to the maple syrup.
This process adds a greater dimension to the syrup, which is appealing to many chefs around the U.S. Burton has worked with many chefs to develop innovative maple syrup variations just for them. He created a special Tabasco-infused maple syrup, an oak barrel flavored syrup, and even one that was infused in cream for a custard, which was served at a James Beard dinner.
So, if you see Burton’s maple syrup on your restaurant menu, you know it is one of the best.
