About the Recipe: This salad is so refreshing with sweet mango chunks, thin red onions, chopped red bell peppers, and chopped cilantro. Just a splash of fresh lemon juice with a little olive oil adds the bright flavor.
Cook’s Note: I was asked to prepare this recipe for a gourmet dinner party. The original recipe used minced serrano peppers and I added them but removed the seeds. Most people felt the salad was still too hot. If you enjoy a little heat, add about two minced peppers. Also make sure that your mangoes are very ripe, so they add that wonderful sweet flavor to the dish. It is a tasty salad to serve with your favorite meat entrée.

To remove strong onion flavor: Place sliced red onion in small microwave bowl; cover with water; cook in microwave for 1 minute; set aside for 5 minutes; drain; pat dry before using.
