About the Recipe:  What a great idea! Blending a healthy shredded cabbage/carrot salad with golden pasta and mixing it with a Thai-inspired light flavored peanut sauce made a delightful early fall dinner. The best part of this copycat recipe is that you can add any favorite veggie or even punchy-protein beans you might enjoy.

Cook’s Note: If the noodles become dry, add a little warm broth to the dish. I used saffron spaghetti, purchased from Eataly in Chicago, Illinois. It has a beautiful golden color, which highlights the salad dish.

  • In a large pot, cook noodles according to package directions. Drain; rinse with cold water.
  • While noodles cook, make sauce. In large bowl, whisk together peanut butter, water, vinegar, soy sauce, maple syrup and sesame oil.
  • Add shredded cabbage, bell peppers, onions, dates, jalapeno pepper, and cilantro.
  • Serve warm or chill in the refrigerator and serve cold.
  • Before serving: Garnish with sliced red cabbage, sliced green onion, and sesame seeds.  Refrigerate any leftovers
